Barrels of new oak, one year or two years, are used for the fermentation of the must, then initiates a maturation of 6 months on fine lees with stirring in the same oak barrels in the Appalachians, some of which are designed in a Quebec cooper in this assembly.

This wine refreshing aromas of apples, pineapple and spices, binding to toast aromas, honey and vanilla from its passage in oak barrels. A fresh and tasty mouth, where the white fruit flavors express themselves with finesse, supported by flavors of oak bringing flexibility and length.
